2 lg. potatoes, peeled and cut into 1/2" strips
3 egg whites
1 1/2 tbsp. grated Parmesan cheese
Pinch pepper

Preheat oven to 400 degrees. Spray a cookie sheet with Pam. Whisk together egg whites, Parmesan cheese, and pepper. Dip potato strips in egg mixture to coat. Arrange potatoes on prepared cookie sheet. Bake for 15 minutes. Turn over and cook for 15 minutes more or until golden brown. Serve with ketchup on the side.
