FRIED CATFISH 
2 lbs. catfish, skinned and cleaned
1/2 c. cornmeal
1/2 c. flour
1 tsp. salt
1/4 tsp. pepper
1 egg
1 tbsp. water
Vegetable oil

Cut fish into serving pieces, combine cornmeal, flour, salt and pepper. Beat egg and water until blended. Dip fish in egg mixture then coat in cornmeal mixture. Heat vegetable oil until very hot. Fry fish over medium heat, turning carefully with lid off until golden brown on both sides, about 10 minutes.
