CHICKEN FRIED RICE 
4 c. cooked, cold rice
3 eggs
1 1/2 tsp. salt
2 tbsp. oil
1 med. onion, diced
1 c. diced ham
1 c. cooked chicken, diced
1/4 tsp. pepper
2 stalks green onion, chopped
1/2 c. frozen peas
2 tbsp. soy sauce

Scramble eggs and cook with oil and set aside. In a big skillet, add oil and fry onions and rice until heated thoroughly. Add pepper, salt and soy sauce. Add the scrambled eggs and green onion last and or before serving.
