JELLY ROLL 
3 eggs
1 c. sugar
5 tbsp. water
1 tsp. vanilla
1 c. flour
1 tsp. baking powder
1/4 tsp. salt
Confectioners sugar
1 med. size jar favorite jam
1 pt. whipping cream

Preheat oven to 375 degrees. Line 10 x 15 x 1 inch cookie sheet with waxed paper. Beat eggs until thick and lemon color. Add sugar gradually. Beat in water and vanilla. Sift flour, baking powder and salt. Beat into egg mixture just until smooth and well blended. Pour into cookie sheet. Bake 12-15 minutes at 375 degrees. While baking, put two sheets of waxed paper on counter side by side (big enough for cookie sheet). Sprinkle with powdered sugar. Turn cookie sheet upside down on powdered wax paper. Cut 1/2 inch off each side to keep it from splitting when rolled. Spread cake with sweetened whipped cream, then with jelly or jam over that. Begin to roll like a sleeping bag. Very gently pick up and put in bread pan size pan or dish. Spread remaining whipped cream on top. Put in a plastic bag, pan and all. Chill in refrigerator for 2-3 hours. Slice when ready to serve.
