BUTTERMILK OATMEAL MUFFINS 
3/4 c. brown sugar
1/2 c. shortening
2 eggs
1 c. buttermilk
1 c. quick rolled oats
1 c. flour
1 tsp. baking powder
1/2 tsp. salt
1/2 tsp. baking soda

Soak oatmeal in buttermilk for 1 hour or overnight will be fluffier. Mix in shortening, brown sugar and egg. Add dry ingredients together and stir in. Bake in greased cupcake tins.
