HEART OF PALMS 
1 - 14 oz. can of hearts of palm
3/4 c. fresh parmesan, grated
3 tbsp. green onions, chopped
1/2 c. mayonnaise (lite works well)
1/2 c. sour cream (lite works well)
2 tbsp. chopped pimento or fresh red pepper
1/8 tsp. cayenne

Preheat oven to 350°F. Drain and chop hearts of palm. Set aside 1 Tbsp. parmesan. Combine all other ingredients, mix well. Spread into shallow baking dish. Sprinkle remaining cheese on top.

Bake 20 minutes or until hot and bubbly. Remove and mix again. Serve as a dip or spread on crackers, bread or pita bread.
