MICROWAVE CHICKEN CACCIATORE 
2 oz. sun dried tomatoes
1 c. water
1 tbsp. olive oil
1 med. onion
2 cloves diced garlic
2 green bell peppers
1/2 lb. mushrooms
1 lb. boneless chicken breast strips
2 tbsp. chopped parsley
1/2 tsp. Italian herb seasoning
1/2 tsp. sugar
1/4 tsp. oregano
1/2 tsp. salt
1/4 tsp. pepper

Place tomatoes and water in micro-safe bowl and cover and cook on high for 3-4 minutes. Let stand 5 minutes, remove and chop tomatoes; return to liquid.

Place olive oil, onion, garlic in 3-quart micro-safe casserole and cook on high for 3-4 minutes, stirring once. Stir in bell pepper and mushrooms and cook for another 3-4 minutes until peppers are almost tender. Stir in tomatoes with liquid, chicken strips, parsley and all the rest of the ingredients.

Cook in microwave for 5-6 minutes on high until chicken is fully cooked. Let stand 3 minutes and serve with noodles and Parmesan cheese.

TIP: Best when eaten the next day.

Since microwave ovens vary in power, you may need to adjust your cooking time.
