PINEAPPLE UPSIDE DOWN CAKE 
1/3 c. butter
1 c. granulated sugar
1 egg
1 3/4 c. flour
3 tsp. baking powder
1/4 tsp. salt
1 tsp. orange extract
1/2 c. milk

SAUCE:

3 tbsp. butter
3/4 c. brown sugar
6 slices pineapple

Cream butter and sugar; add beaten egg and flavoring. Sift dry ingredients together; add to first mixture alternately with milk. Cream butter and brown sugar. Rub bottom and sides of pan. Place pineapple and cover with batter. Whipped cream may be used for topping, if desired. Bake about 45 minutes.
