BLACK WALNUT CAKE 
2 c. flour
2/3 c. butter
3 eggs, separated
3/4 c. milk
2 tsp. black walnut flavoring
2 3/4 tsp. baking powder
1 1/2 c. granulated sugar
1 tsp. vanilla
1/4 tsp. salt
1 c. ground black walnuts

Grease and flour two 9 inch cake pans. Stir dry ingredients together. Cream butter and sugar. Add egg yolks and vanilla; beat well. Add flour mix, gradually alternating with milk. Beat well after each addition.

Fold in stiffly beaten egg whites, nuts and flavoring. Some nuts can be saved for top of cake after it has been iced. Bake in 350 degree preheated oven for 30 minutes or until center springs back at the touch. Cool before icing.
