1 lb. ground beef 1 med. onion, chopped 1 s. green pepper, chopped 1/2 c. celery, diced 2 (16 oz.) cans tomatoes 2 (15 oz.) cans tomato sauce 3 to 4 (15 1/2 oz.) cans chili beans (or kidney or pintos) 1 to 2 tsp. chili powder, depending on personal taste 1 (6 oz.) can tomato paste 1/2 tsp. pepper 1/2 c. green olives, chopped, optional Salt to taste Hot pepper, optional Brown ground beef and onion. Drain. In crockpot or large pan mix together ground beef mixture, green pepper, celery, olives and chili beans. Add tomato paste and mix well. Add and mix tomatoes, tomato sauce, chili powder, pepper and salt. Cook in crock pot about 4 to 8 hours. For stove top bring to slight boil reduce heat and simmer for 2 to 4 hours, stirring occasionally. Serve in bowl with garnishes of sour cream, shredded Cheddar cheese, chives, black olives or corn chips. |
