FRUIT CAKE (Diabetic) 
1 1/3 c. non-fat dry milk
1/2 c. orange juice
6 slices pineapple (canned in own juice)
Plus 6 tbsp. juice
2 c. cranberries, chopped
2 med. apples, peeled & chopped
Artificial sweetener to equal 1/2 c. sugar
2 tbsp. lemon juice
2 tsp. cinnamon
1 tsp. vanilla extract
8 slices bread, toasted & crumbled

Combine dry milk, orange and pineapple juice and whip with milk until stiff. Add pineapples, cranberries, apples, sweetener, lemon juice, cinnamon and extract. Blend thoroughly. Add bread crumbs and milk well. Pour into non- stick loaf pan. Bake at 350 degrees for 1 hour. Cool on rack and invert.
