LOW CALORIE DIABETIC CAKE 
2 c. water
2 c. raisins (unsweetened fruit cocktail may be used)
1 c. unsweetened apple sauce
2 eggs
1 tbsp. liquid sweetener (less sweetener is best)
3/4 c. cooking oil
1 tsp. baking soda
2 c. flour
1 1/4 tsp. cinnamon
1/2 tsp. nutmeg
1/2 tsp. salt (if not on salt free diet)
1 tsp. vanilla

Cook the raisins in water until soft and drain off remaining water. Add to raisins (or to drained fruit cocktail) the applesauce, eggs, sweetener, and cooking oil. Mix well. Add the dry ingredients and vanilla. Bake in 13 x 9 inch pan at 350 degrees until toothpick inserted comes out clean.
