FRESH CORN PUDDING 
6 ears of corn, scraped
3 eggs, separated
1/2 tsp. salt
3 tsp. sugar
Dash of pepper
2 tbsp. butter
3 tbsp. flour
1 c. milk

Preheat oven to 350 degrees. Butter a 1 1/2 quart baking dish. Melt butter in a saucepan. Add flour and milk. Stir constantly over low heat until thickened. Remove from heat, stir in egg yolks, salt and other seasonings. Beat egg whites. Fold into corn mixture. Pour into baking dish and bake for 45 minutes. Serve warm.
