PUMPKIN CHEESE CAKE 
7 egg whites (peak egg whites)
1 1/2 lb. ricotta cheese
2 egg yolks
1 c. sugar
1 1/2 tsp. vanilla
1 1/2 c. pumpkin
1 tbsp. spices
1 tsp. baking powder

Pour everything together. Fold in egg whites. Stir thoroughly. Grease and flour a pan. Bake at 350 degrees for 50 minutes.
