RHUBARB CUSTARD PIE 
3 c. chopped rhubarb
1 c. sugar
1 tbsp. flour
1 tbsp. butter
2 eggs, well beaten

Pour boiling water over 3 cups of rhubarb. Drain after 4-5 minutes. Mix butter to warm rhubarb to melt. Mix sugar and flour together and add to rhubarb and butter. Beat eggs until foamy. Fold into rhubarb mixture and pour into bottom crust in pie pan. Bake 40 minutes at 350 degrees or 325 degrees.
