BAKED EGGS 
8 slices high fiber bread
4 slices cheddar cheese
4 slices American cheese
5 eggs
2 c. milk
Salt and pepper to taste

Trim crusts from bread. Butter one side of bread. Pour four slices of bread, buttered side down, in a glass baking dish. Place a slice of each cheese on each bread slice. Top with remaining bread slices, buttered side up.

Beat eggs and milk together. Pour over bread and let stand, covered, in refrigerator overnight. Bake at 400 degrees for 1 hour, check after 40 minutes.

If desired, crumbled bacon, 4 ounces mushrooms or seafood may be added before adding the top slices of bread.
