BANANA HONEY COOKIES 
2 tbsp. butter, softened
2 eggs
1/2 c. honey
1 tsp. vanilla
1/2 c. whole wheat pastry flour
1/2 c. unbleached white flour
1 tsp. baking powder
1/2 tsp. baking soda
1 c. rolled oats
1 ripe banana
1 tsp. fresh lemon juice
1/2 c. chopped walnuts
1/2 c. raisins

Preheat oven to 350 degrees. Sift together whole wheat flour, unbleached white flour, baking powder and baking soda, set aside.

In a large bowl, beat together softened butter, eggs, honey and vanilla until lemon colored. Add mashed banana and lemon juice into egg mixture. Gradually stir in flour mixture, blending well. Stir in oats and nut and raisins if desired. Drop by teaspoonfuls onto prepared baking sheets. Bake until cookies are golden, 10 to 12 minutes. Makes 3 dozen cookies.
