APPLE POTATOES CINNAMON 
2 1/2 c. water
4 c. diced potatoes
3 c. diced apples
1/2 c. chopped onions
2 tbsp. oil
1 tbsp. salt
1 tbsp. potato or cornstarch
1/2 tsp. cinnamon or more

Measure water in pan, add potatoes, apples and onion. Bring to a boil and cover and simmer until soft. Drain and reserve 3/4 cup of hot liquid. Combine oil, salt, starch, and cinnamon and add to hot potato liquid. Cook over heat until thick. Fold into potatoes and apples. Serve hot.
