2 c. sugar
1 c. vegetable oil
3 eggs, well beaten
3 c. diced tart apples
3 c. sifted all-purpose flour
1/4 tsp. salt
1 tsp. baking soda
2 tsp. cinnamon
2 tbsp. vanilla
1 c. chopped pecans

Preheat oven to 300 degrees. Mix ingredients in order given. Batter will be stiff. Pour into greased, floured tube pan. Bake 1 1/2 - 2 hours at 300 degrees. Cool before slicing.

Can bake at 350 degrees about 1 1/2 hours and can use Delicious apples.
