BREAD (50% WHOLE WHEAT IF DESIRED) | |
1/2 c. lukewarm water 1 cake Fleishmann's yeast 2 c. scalded milk 7 1/2 c. flour sifted 2 tbsp. shortening, melted 1 tsp. sugar 2 tsp. salt Dissolve water, sugar and scalded milk in large bowl. When cool, add yeast, 3 cups flour and beat until smooth. Let rise until light (about 1 hour). Then add melted shortening, sugar, salt and 4 1/2 cups flour. Knead until elastic. Let rise until double in size (about 1 hour). Make into 2 loaves, put in greased pans and allow to double in size (another hour). Bake at 350 degrees for 1 hour. When using whole wheat flour, use 3 portions of white flour to one of whole wheat, or half and half. Never fails. Makes 2 loaves. |
