LUTEFISK
On Christmas Eve lutefisk if traditionally served in our home with buttered lefse. It can be found in most supermarkets or fish markets during the winter months.

2 lbs. lutefisk
1/2 lb. butter, melted

Rinse fish thoroughly in cold water, tie fish in cheese cloth for cooking since it is very tender and will break apart. Place in cool salted water in five quart pan and bring to boil. Cook for approximately 10 minutes or until tender and translucent.

Remove gently and serve with melted butter. Serves 4. This fish could be cooked in microwave according to directions for any white cod fish.

Since microwave ovens vary in power, you may need to adjust your cooking time.

Check the fish towards the end - or it could disappear. You're going for flakes of fish not fishy jelly. Melted butter and alspice dusted. I miss lutefisk, potatas corve and boiled potatoes with white sauce. Can't get it where I live. My FAVORITE Christmas Eve dinner. Santa didn't come until you ate your lutefisk.

Lutefisk. We finally found a special market that sells fresh Lutefisk and put our name on list. We didn't ask how much per pound. Oh what a surprise. Very very expensive in the east. We are from Minnesota where it was easy to get in the fall, but not here. We are going to savor every bite! I like it with cream sauce over boiled potatoes, my husband like just melted butter.
