VEAL CRISTO 
1 veal cutlet, pounded thin
1 slice of ham
1 slice Swiss cheese
1 serving ratatouille (recipe follows)
2 tbsp. butter

Melt butter in skillet over moderate heat. Saute veal until golden brown on each side. Spread the bottom of serving dish with ratatouille and place veal cutlet on top of the vegetable mixture. Top veal with the ham and cheese. Place under the broiler until cheese melts and begins to bubble. Serves 1.
