SUPER OATMEAL MUFFINS 
1 c. oatmeal
1 c. buttermilk
1/3 c. butter
1/2 c. brown sugar
1 egg
1 c. flour
1 tsp. baking powder
1/2 tsp. baking soda
1 tsp. salt

Preheat oven to 400 degrees. In mixing bowl mix; oatmeal, buttermilk (can use buttermilk powder and water), brown sugar and butter. Let stand overnight. Then add egg and beat well. Add dry ingredients. Stir just until moistened. Pour into 6 oiled custard cups or 12 regular muffin cups oiled. Bake 20-25 minutes in muffin cups, slightly longer in glass custard cups. May sprinkle with cinnamon and sugar before baking if desired.
