LOW CHOLESTEROL BLUEBERRY COFFEE
CAKE
 
1/2 c. sugar
1/4 c. Promise butter
2 egg whites
1 1/2 c. white flour
1/2 c. wheat flour
2 tsp. baking powder
1/2 c. skim milk
1 1/2 c. blueberries
1/4 c. brown sugar
1/4 c. white flour
1/2 tsp. cinnamon
1/4 c. Promise butter

Mix thoroughly sugar, butter and egg whites. Stir in milk. Sift together flour and baking powder. Add to first mixture. Blend for 2 minutes. Gently fold in blueberries (fresh or frozen). Spread in greased and floured 9 inch pan. Sprinkle top with crumb mixture of brown sugar, flour, cinnamon and butter. Bake at 375 degrees for 45 minutes.
