BLENDER LEMON PIE 
3/4 c. sugar
1/4 c. cornstarch
Dash of salt
1 c. water
1/4 c. lemon juice or 1 lemon
Rind of 1 lemon
3 egg yolks
1 tbsp. butter

Put all the ingredients into a blender and cover; blend on high speed for 20 seconds. Pour into a saucepan and cook over low heat, stirring constantly until thickened and smooth. Pour into a baked pie shell and use egg whites for meringue.
