BLENDER LEMON PIE 
1 lemon (thin skin)
4 eggs
1 stick butter, softened
1 1/2 c. sugar
1 (9") deep dish frozen pie shell, unbaked

Thinly slice ends from whole lemon. Cut in quarters and remove seeds. Place lemon quarters in blender and add eggs. Blend until smooth. Add butter, 1/4 at a time, blending well between additions.

While blender continues to mix, slowly pour sugar into mixture. Blend until smooth. Pour into unbaked pie shell and bake at 350 degrees for 30-40 minutes or until lightly browned.
