PASTA WITH SAUSAGE AND PEPPERS 
2 onions
3 green bell peppers
2 cloves garlic
2 (16 oz.) cans plum tomatoes
3/4 lb. sweet Italian sausage
2 tbsp. olive oil
Salt & pepper
1/2 tsp. dried oregano
8 oz. spaghetti

Slice onions. Cut peppers into strips. Mince garlic. Drain tomatoes and chop. Slice sausage. Heat 1 tablespoon in a frying pan over medium-high heat. Cook sausage until brown on both sides, about 10 minutes. Remove and drain. Add 1 tablespoon oil and the onions to pan and cook until golden, about 10 minutes. Add peppers and cook until soft, about 5 minutes. Add garlic and cook 1 minute. Stir in tomatoes, sausage, 1/2 teaspoon salt and the oregano. Bring to a boil, cover and reduce heat. Simmer until peppers are very soft, about 10 minutes. Remove cover, add 1/2 teaspoon pepper and simmer until liquid thickened, 10 to 15 minutes. Cook spaghetti and serve with sauce. 4 servings.
