SAUSAGE, PEPPERS, AND ONIONS 
1 lg. onion
3 lg. green bell peppers
3 tbsp. olive oil
Salt and freshly ground black pepper to taste
1 lb. hot Italian pork sausages
3/4 c. dry red wine

Wash peppers; remove stem ends and seeds. Cut into large chunks; slice onions. Pour olive oil into oven-proof, flame-proof baking dish. Saute pepper chunks and onion slices in olive oil until they begin to soften. Sprinkle with salt and pepper to taste. Remove peppers from dish; set aside. Brown sausage in same dish. Add wine. Cover; bake in preheated 350 degree oven 40 minutes. Uncover; add sauteed green peppers. Bake about 30 minutes longer. Serve at once in same baking dish.
