CREAMY BROCCOLI CHICKEN
CASSEROLE
 
2 tsp. butter
1/4 c. onion, diced
1 tbsp. + 1 1/2 tsp. all purpose flour
1 c. skim milk
2 oz. cheddar cheese, shredded
Dash salt & pepper
6 oz. skinned & boned chicken, diced & cooked
1 c. chopped broccoli, cooked
3/4 c. macaroni shells, cooked
1/4 c. pimientos, drained & chopped

Preheat oven to 375 degrees. In a small saucepan heat butter until bubbly and hot. Add onion and saute; add flour and stir rapidly to thoroughly combine. Remove from heat and gradually stir in milk; stirring until thoroughly blended. Return to heat and cook, stirring constantly until slightly thickened; add cheese and cook over low heat, stirring until cheese is melted and sauce is thick and creamy. Remove from heat and stir in salt and pepper.
