CAJUN RED BEANS & RICE 
1 c. rice
1 can red beans (do not drain)
1 sm. jar sliced mushrooms
1/2 pkg. frozen sweet peas (1/2 to 3/4 c.)
3/4 c. barbecue sauce (Hunt's Original)

Cook rice per instructions except do not salt. Do not over cook rice. When rice is done add the rest of the ingredients and simmer for 30 to 45 minutes. Add water as needed. Add salt or other seasons as desired.

A piece or two of microwaved BBQ chicken breasts can be chopped up and added to include a meat.

Since microwave ovens vary in power, you may need to adjust your cooking time.
