BLACK-EYED PEA SALSA 
3 to 4 cans black-eyed peas, rinsed and drained
1 bunch green onions, chopped
jalapeno pepper to taste, chopped
1 can corn or hominy, rinsed and drained
salt and pepper to taste
1 tbsp. minced garlic
1 bell pepper, chopped
2 to 3 cans Ro-Tel tomatoes
3 tbsp. sugar
1 (16 oz.) bottle oil and vinaigrette dressing

Mix all together. Chill and serve with Fritos or tortilla chips. May also pour into pretty jars and seal for great gift ideas.
