BLACK-EYED PEA CASSEROLE 
1 lb. ground beef
2 (16 oz.) Black-eye peas
2 c. cooked rice
1 (16 oz.) can tomatoes, drained and cut -up
1 c. grated cheddar cheese
1/2 c. minced onion
1 tbsp. butter
Salt and pepper to taste

Brown beef and drain. Mix in other ingredients in the order listed. Stir. Pour into 13 x 9 x 2 inch pan.

Bake at 350°F for 20 minutes.
