BLACK EYE PEA-MEAL-IN-ONE 
1 med. onion
1/2 bell pepper
1 tbsp. butter
1 lb. lean ground beef
2 (15 oz.) cans jalapeno
1 can black eye peas
1 (16 oz.) can tomatoes
2 c. cooked rice
2 c. sharp Cheddar cheese
Salt and pepper to taste

Chop seasoning and saute in butter until soft. Add ground beef and brown. Stir in black eye peas and cooked rice. Do not drain peas. Drain and chop tomatoes, add to mixture; mix well. Season with salt and pepper.

Put in 2 quart casserole. Cover with grated cheese. Bake 350 degrees for 20 minutes, uncovered. Serves 6 to 8. Good with crisp green salad.
