BLACK-EYED PEA SALAD 
2 (10 oz.) pkgs. frozen black-eyed peas
1 c. bottled Italian salad dressing
2 tsp. sugar
1/4 tsp. crushed red pepper
1/2 c. sliced celery
1/2 c. chopped green pepper
1/4 c. chopped pimento
4 to 5 green onions, thickly sliced
1/4 c. chopped parsley
Salt & pepper
Lettuce leaves

Cook peas as directed on package; drain. Shake Italian dressing, sugar and crushed red pepper in tightly covered container until blended. Combine cooked peas, celery, green pepper, pimento, green onion, and parsley. Gently toss pea mixture and salad dressing; season with salt and pepper. Chill. Serve on lettuce leaves. Makes 4 to 6 servings.
