ESTHER FISHER'S SWEDISH RUTAMNS 
2 lb. country style pork ribs with bone (lean)
1 lg. rutabagas, quartered & peeled
3-5 lg. russet baking potatoes, peeled & halved
2 bay leaves, whole
5 black whole peppercorns
butter

Bring lean pork ribs (separate each rib if joined together) along with attached meat to boil in 4 quarts of water, pepper and bay leaves. Reduce heat and simmer for 2 hours or until tender.

Then add rutabagas and potatoes; cook until almost tender (45 minutes). Lift vegetables with slotted spoon to large mixing bowl. Mix until mashed. Add butter, salt and pepper.

Serves 4.
