SPINACH BALLS 
2 pkgs. fresh or frozen chopped spinach
1 lg. onion, chopped fine
1 pkg. Pepperidge Farm stuffing mix
6 eggs, well beaten
3/4 c. butter
1 tbsp. coarse ground black pepper
1/2 c. grated Parmesan cheese
1/2 tsp. garlic salt
1/2 tsp. thyme
1/2 lb. cooked, drained, crumbled sausage (optional)

Cook spinach according to directions. Drain and squeeze dry. Mix all above ingredients and roll in small balls. Put on a greased cookie sheet and bake at 325 degrees for 15 to 20 minutes. Can be frozen and reheated in microwave.

Since microwave ovens vary in power, you may need to adjust your cooking time.
