ALMOND ROCA COOKIES 
1 c. butter, very soft
1/2 c. white sugar
1/2 c. brown sugar
1 egg yolk
3/4 tsp. vanilla
1/4 tsp. almond extract

Mix well until smooth and creamy. Add 2 cups flour; mix well. Press into jelly roll pan. Bake at 350 degrees for 12 minutes. Remove pan. Turn off oven. Immediately sprinkle 12 ounce package of chocolate chips. Put back into oven for 1 minute. Put back in oven for 1 minute. Remove pan. Heat large spoon under hot running water. Dry spoon, smooth chips with back of spoon until cookies are covered. Sprinkle on 3 ounces almonds or other chopped nuts. Press lightly into cookies, cool, cut and serve.
