FRESH APPLE CAKE 
2 1/2 c. flour
1/2 c. butter
1 1/2 c. sugar
1 (8 oz.) lowfat plain yogurt
1 egg
2 tsp. baking soda
1 tsp. cinnamon
1/2 tsp. salt
1/4 tsp. nutmeg
3 c. chopped apples
1 c. chopped nuts
2 tsp. vanilla

Cream butter and sugar; then add yogurt and egg; beat until fluffy; combine flour, soda, spices, salt and mix well; stir in dry ingredients into creamed mixture; add apples and nuts; blend well. Pour into greased 13x9x2 pan. Bake at 350 degrees for 30 minutes.
