CORNMEAL MUFFINS 
1 c. all purpose flour
1 c. yellow cornmeal
1/3 c. sugar
1 tbsp. baking powder
1 tsp. salt
2 tbsp. finely chopped onion
1 c. cream style corn
1/2 c. mayonnaise
3 tbsp. vegetable oil
1 egg

In a large mixing bowl, combine dry ingredients. Make a well in the center and add all remaining ingredients. Stir just until mixed. Spoon into 12 greased muffin tins. Bake at 400 degrees for 20 minutes. Yield: 12 muffins.
