CORNMEAL MUFFINS 
1 egg
1/2 tsp. salt
2 tbsp. sugar
1 c. flour
1 c. milk
1 tbsp. shortening
3 tsp. baking powder
1/2 c. cornmeal

Preheat oven to 370 degrees. Beat the egg with the milk, and add salt and shortening. Mix together dry ingredients in a separate bowl and then add to the wet ingredients. Mix quickly and bake in muffin tins lined with cupcake papers for 20 minutes.
