CORNMEAL MUFFINS 
3/4 c. cornmeal (plain)
1/4 c. flour (plain)
3 tsp. baking powder
1/2 tsp. salt
2 tbsp. sugar
7 oz. milk
1 egg
1/4 c. oil

Sift together dry ingredients. Beat egg and add milk and oil. Pour into HOT greased muffin tins. Bake at 425 degrees for 28 to 30 minutes.

Bacon grease works best for greasing pan. Heat pan then pour off excess grease.
