CORNMEAL MUFFINS 
3/4 c. sifted all-purpose flour
3/4 c. yellow cornmeal
3 tbsp. sugar
2 tsp. baking powder
3/4 tsp. salt
1 egg
3 tbsp. soft shortening
3/4 c. milk

Sift dry ingredients into bowl. Add egg, milk and shortening and beat until just blended well. Do not over beat. Fill greased muffin pan about 2/3 full. Bake in 425 degree oven for 20 to 25 minutes, until a golden brown. Makes 5 medium sized muffins.
