CORNMEAL MUFFINS 
1 1/4 c. sifted flour
3/4 c. yellow cornmeal
1/4 c. sugar
1/2 tsp. salt
3 tsp. baking powder
1 egg, well beaten
3/4 c. milk
1/4 c. shortening, melted

Sift flour, corn meal, sugar, salt and baking powder. Add beaten egg and milk; mix well. Then add melted shortening and blend. Spoon batter into greased muffin cups and place in cool pan. Bake at 400 degree oven for 15 to 20 minutes.
