WESTERN STYLE POT ROAST 
3 lb. beef brisket or boneless round or chuck roast
1 c. chopped onion
1 c. ketchup
1/4 c. Worcestershire sauce
2 tbsp. brown sugar
2 tbsp. cider vinegar
2 tsp. salt

In heavy pot, brown meat on all sides in oil. Add onion and cook until golden. Combine ketchup, Worcestershire sauce, brown sugar, vinegar and salt. Pour over meat. Simmer, uncovered, until meat is tender, about 3 hours. Serve sliced with sauce along with onions, carrots and potato chucks if desired.

Serves 8.
