BROWN RICE SALAD 
1 c. brown rice
6 green onions
1 red pepper, diced
1/2 c. raisins
2 oz. cashew nuts
2 tbsp. sunflower seeds
1/4 c. soy sauce dressing
3 tbsp. chopped parsley

Cook rice until tender. Rinse and drain well. Chop green onions fine. Add to rice and remaining ingredients. Toss thoroughly. One can sweet corn and diced green pepper may be added.

SOY SAUCE DRESSING:

3/4 c. oil (sunflower or corn)
2 tbsp. lemon juice
4 tbsp. soy sauce
1 clove garlic, crushed

Put all ingredients in jar; shake well. Makes 1 cup. Serves 6 to 8.
