1 med. onion
2 tbsp. vegetable oil
3 c. chicken broth
3/4 c. peanut butter
Salt & pepper

Cook onion in oil until brown. Lower heat and blend in peanut butter and broth slowly, stirring constantly. Boil, season with salt and pepper, lower heat and simmer 10 minutes.
