PEANUT SOUP | |
4 c. chicken or beef broth 1 med. sized onion, chopped 1 sm. tomato, chopped 1 tbsp. chopped parsley 1 tbsp. oil 1/2 c. cooked peas 1 carrot, cooked & chopped 1/2 c. raw peanuts, peeled & ground to a paste in a blender Simmer together the onion, tomato and parsley in oil. Add the broth and the other ingredients. Cook without stirring for 30 minutes. |
