PEPPERMINT CREAM 
24 marshmallows
1/2 c. milk
3 drops peppermint flavoring
1 c. heavy whipped cream
1 tsp. vanilla
1/8 tsp. salt
Green food coloring

Melt marshmallows in milk over hot water. Remove from heat; cool slightly. Stir in peppermint flavoring, vanilla, salt and desired amount of food coloring. Chill until mixture mounds slightly when dropped from spoon; fold in whipped cream. Spoon into parfait glasses; chill until firm. Garnish with green maraschino cherries and fresh mint leaves. Yield: 4 servings.
