BROCCOLI QUICHE 
2 frozen 9" pastry shells
2 pkg. (10 oz.) chopped broccoli (room temperature)
3 c. shredded Muenster cheese
4-5 scallions, cut fine
4 eggs
1 c. skim milk
1 c. mayonnaise
2 tbsp. cornstarch

Pierce pastry shells with fork and bake in 375 degree oven for 10 minutes on a cookie sheet.

In large bowl toss together broccoli, cheese, scallions, beaten eggs, mayonnaise, milk and cornstarch. Mix very well. Pour into baked pie shells. Bake on cookie sheets, one at a time, for 35-40 minutes at 375 degrees or until golden brown.

For freezing: Bake only 30 minutes. Wrap well in double aluminum foil and put in a plastic bag. Cut before freezing.
