CARROT AND LEMON BREAD 
3 lg. eggs
1 c. oil
1 3/4 c. sugar
2 c. shredded carrot
1/2 med. lemon
3 c. flour
1 tsp. salt
1 tsp. baking soda
1/2 tsp. baking powder

Grind lemon (peel and pulp) in blender. Beat eggs, add oil and sugar. Mix well. Add carrots and lemon and blend. Sift together dry ingredients, add to liquid ingredients and mix, just to blend. Pour into 2 greased loaf pans and bake at 350 degrees for about 1 hour.
